I'm drawn to authentic things. Fire, wood smoke, cooking outdoors, good wine, proper ingredients.
I care about where things come from and how they're grown. Organic, biodynamic, natural systems that haven't been stripped back and standardised into something lifeless.

A lot of my time is spent working with land. Growing, cooking, managing woodland. It all feeds into the same thing. Understanding ingredients at their source, and then doing as little as possible to ruin them.
Dark Skies came out of all of that. We roast in Galloway, South West Scotland, part of a UNESCO Biosphere and home to some of the darkest skies in Britain. Real wood fire, small batches, beans from farms that work the way we think farming should work.
For me it's about happiness in a simple sense. Family, being outdoors, eating well, and creating something that feels real.
